Decaffeination Process: Liquid CO2 Process This decaffeination method begins by soaking the green coffee beans in water until their moisture content reaches about 50%. As the beans swell, the internal cavities open up, making the caffeine mobile and ready to be extracted. 

The moistened beans are then sealed in a thick stainless steel tank. Liquid carbon dioxide is introduced into the tank to dissolve the caffeine. Afterward, water is used to remove the caffeine from the carbon dioxide.

After this process, the coffee beans contain only about 0.08% of their original caffeine. Once the process is complete, the carbon dioxide is pumped out and stored for future decaffeination batches, while the coffee beans are dried to remove any remaining carbon dioxide.
