The Tarrazu region is nestled in the mountains of inland Costa Rica and is well-known for its exceptional coffee production. "Tarrazu" is the official marketing name for coffee grown and processed within this region. Coffee from this area is recognized for its full body and complex aroma.
Harvesting, which takes place from December to February, generates a large amount of organic waste (coffee cherries) during the processing phase. While some of the leftover coffee cherries can be used as fertilizer, the sheer volume is so great that most are discarded into rivers, altering the water's chemical quality and affecting wildlife.
One way to mitigate this problem is the development of alternative products like Cascara (coffee cherry tea) and coffee flour, which help reduce the environmental impact of large-volume crops by turning waste into usable food products. This not only benefits the environment but also provides a secondary source of income for local farmers.
